Kaiyo Whisky “The Peated” is aged initially for two years in ex-Madeira barrels to impart a sweetness to balance the level of peat. It is then transferred to Mizunara Oak, where it will continue to mature for the rest of its days. All of our whiskies are made from malted barley, un-chillfiltered, and enjoy a three-month ocean maturation that helps bring out the unique flavors that can only be obtained from Mizunara Oak. Tasting Notes: This is what we call our “Sweet Peat”. On the nose, the peat is present but is finely balanced with exotic fruit notes. On the palate, this whisky is deceivingly light and clean with fruit flavors of apple, coconut, pineapple, burnt orange and watermelon with a lingering smoke that compliments the sweet components perfectly.
